Commis Chefs

Do you want to work in one of the top hotels on the island? We are looking for experienced Commis Chefs to manage the smooth running of a very busy kitchen. As Chef you will be responsible for all aspects of the smooth running of the kitchen operation within the hotel, from buffets for breakfast, lunches and functions, to the a la carte menu on a daily basis.


What is expected of you?

  • Direct, prepare or supervise cooking and other food preparation activities daily
  • Develop and plan menus and daily specials.
  • Monitor and ensure that regulations and standards of cleanliness are always being strictly adhered to by employees.
  • Coordinate all food purchasing, budgeting and planning operations with other staff members
  • Meet with customers as needed to arrange menu items and negotiate prices for catering weddings, banquets and other special occasions
  • Inspect cooking equipment, supplies, work areas and ingredients to ensure constant conformance to regulatory standards
  • Recruit, train and develop employees,
  • Possess and develop team knowledge of menus, recipes, portion control and presentation style


What are you expected to bring?

  • 3-5 years' experience in high-volume kitchens, preferably within a hotel environment
  • Previous kitchen management experience with teams of 10-20 people
  • Experience with end of service procedures, unused foods and disposal of waste
  • Good knowledge of statutory, health and safety regulations
  • Demonstrated knowledge of culinary techniques and practices
  • Understanding of menu and recipe development techniques
  • Strong leadership abilities
  • Ongoing awareness of culinary trends
  • Understanding of health and sanitation laws
  • Excellent knife-handling skills
  • Applied wine and beverage knowledge
  • Basic computer skills and experience with Microsoft Office (Excel, Outlook)
  • Formal culinary training / culinary certification
  • Fluency in English
